Martin`s Mercato and a taste of Italy at Quartiere ‘Kalnciems’
This Saturday on the 29th of September, I, together with my chefs from Vincents, will be at Kalnciems’ farmers’ market where we will be cooking ‘a la minute’. That means fresh! The Market’s theme this time is Italy, where there is still sun and warmth which we intend to coax back to Kalnciems!
Rich focaccia bread, hot pasta Paccheri with chingali – ‘wild boar’ and penne pasta with Sicilian pesto. A heirloom tomato soup with parmesan croutons. A salad of Sarmīte`s tomatoes with Genoa pesto and Rušona Martinelli cheese from our own Latgale region. And for desert tiramisu of course, as well as baked apples with vanilla custard and ‘Amedei’ chocolate bombes from Tuscany.
This time our famous Slow Food burger will be replaced by saltimbocca – an escalope of tender pink veal, seared in a copper pan with prosciutto and sage, flamed with Marsala wine, and served on our own baked ciabatta bread with rocket leaves, red onion marmalade and basil aioli.
Our guest and good friend Katrin from Amedei chocolate house in Tuscany, which for the third time was named as the world’s best chocolate, will stand right next to us with the Amadei beautiful assortment of chocolates, pesto, capers and pasta.
